NUTRITIONAL PROPERTIES OF KHORASAN WHEAT

 

An excellent source of energy due to its fatty acids, which is slightly higher than other cereals, allowing to have a greater calorie content per unit of weight.

Higher rate of tolerance: generally, ancient grains are neither manipulated nor do they undergo genetic modifications as a result of irradiations or forced crossings. Therefore, they contain gluten which is easily digestible, making it more favourable to the consumer.

Major polyphenols and flavonoids presence: they are chemical compounds released by the plant to defend itself. Commonly found in ancient grains, particulary those cultivated organically, hence primarily unprotected from “chemical coating”. Polyphenols and flavonoids are relevant antioxidant source and serves a protection to our tissues when consumed.

Considerable amount of starches with unique structures: a complex starch (amylopectin in cereals) requires more time to be digested compared to amylose which is the easiest in which starch is divided.


Accordingly, the organism takes a lot of time in burning the starch in gluocse thus avoiding reactive hypoglicemia (
rapid rise in blood glucose ) caused after consuming cereals with large quantity of carbohydrates.
