Fennel

Fennel are seeds of an umbiliferous with a taste similar to karst but more intense. It is grown in many regions and used mainly in Central European, Indonesian, Indian, Mexican, North African and North American cuisines. It gives its special flavour to gulash and chili with meat. Cultivated fennel is a much smaller plant then the wild one.The part which is used is called lump and is the part that develops in the soil and that can be eaten both raw and cooked. It has very valid nutritional and digestive properties as it is rich in antioxidants, mineral salts and fiber. Called diacheni fennel seeds are another part of the plant much used. They contain many flavouring essential oils so they are used to flavor other foods such as cheeses and soups and they can be used to produce spirits.
