Carrots

Carrots are vegetables rich in carotenes, substance that the body uses for the production of vitamin A which is important for various functions of the body, in particular for visual function. Carrots are very indicated in infant nutrition because they contribute to the absorption of liquids at the intestinal level. They are also good source of flavonoids, antioxidant pigments that act positively on the system. Carrot cultivation is widespread throughout Europe, North Africa and the Asian continent. It is a perennial herbaceous plant belonging to the family of the umbilifers. Carrots develop white flowers with five petals collected in typical umbrella inflorescences. The edible part of the carrot is the root whose average length can vary from 3 to 20 cm, even if there are varieties that are almost 90 cm. The root diameter can normally vary from 1 to 6 cm. Carrot as a weed is very common in meadows and has a less developed and shorter root.
