What we know by the name of cinnamon consists of different plants of the Lauraceae family, especially cinnamomum zeylanicum and cinnamomum cassia. Its taste is very particular: spicy and sweet at the same time. Today cinnamon is mainly used for preparations of cakes, biscuits, sweets and creams. It can also give a special touch to ice cream, fruit salad and ricotta. Many drinks are characterized by the spicy aroma of cinnamon, such as mulled wine, sangria, liqueurs and punch. Even in savory recipes, cinnamon has its own dimension as a flavour in risotto, fish or meat stock and sweet and sour dishes. Especially in oriental cuisine it is easy to find a hint of cinnamon in meat dishes or salty sauces, also because it is one of the spices used for curry.
