Amaranth

Native to Central America, where it was already cultivated by the pre-Columbian civilizations, amaranth is a plant that has several species. It is rich in protein - up to 16% - with high biological value. Compared to other cereals, amaranth contains twice as much lysine, which is an essential aminoacid of which almost all cereals are lacking. It has a high content of calcium, phosphorus, magnesium and iron. Due to its high fiber content, it has a great effect on digestion. Amaranth is gluten-free and is therefore suitable for those who have celiac disease or have intestinal problems but also for children during weaning.
