Chestnut

Chestnuts are a very precious fruit both for their properties and quality as well as for the beauty of their trees that belong to the family of the fagaceae and are widespread in southern Europe, in particular in Italy. Inside a large and durable brown peel, there is a pulp that has extraordinary energetic and nutritive characteristics. Production takes place mainly in mountain areas ranging from 450 metres to 900 metres where the domestic chestnut tree grows and where over time the structures for its production have been established. Thanks to their high caloric content, in the past they were an important, if not the main, source of subsistence for many mountain areas characterized by the so-called "Castagno civilization". Harvest takes place in October, when they fall from the plant and is mainly done by hand. Also called sweet flour, chestnuts flour has a straw-yellow colour with a sweet taste.
