Durum Wheat

Durum wheat -triticum durum- is a herbaceous plant of the Poacea family. The proprieties that distinguish the cultivated one from wild one are the seeds which are free from husks and the rigid rachis which does not detach when ripening. For this reason durum wheat releases seeds free from straws during threshing. A characteristic that distinguishes durum wheat from soft wheat is the vitreous and non-floury aspect of the carioxides when ripe. This is due to the special protein composition of durum wheat which produces semolina and not flour.
